Tahini is made from toasted sesame seeds and is widely used throughout the Mediterranean and Middle East. It is highly nutritious and rich in antioxidants, as well as preventing certain diseases. I like to serve this as a sauce alongside falafel, rice or fish dishes, but it can also be eaten with bread as a dip.
Ingredients (serves 4-6 people)
- 2/3 cup of tahini
- 3 lemons juiced
- 1/2 cup of water
- Bunch of parsley chopped
- 1 garlic clove minced
- Salt and pepper to taste
Preparation
- In a blender or food processor, combine the tahini, water, lemon and garlic, then process for 1-2 minutes until the mixture turns white and is smooth. If it’s too thick, just add more water.
- Place the sauce into a bowl and add the chopped parsley, salt and pepper to taste before mixing.
- Refrigerate for at least 30 mins before serving.
- Garnish with parsley.
