Carrots support brain health and our cognitive functions as well as improving our vision, skin, hair, teeth and so much more. This is a simple side dish which you can make in under 30 minutes.

Ingredients (serves 3-4 people)
- 8-10 carrots chopped
- 2-3 tbsp. of olive oil
- 1 tsp. honey
- 4-5 sprigs of thyme
- Salt and pepper to taste
Preparation
- Preheat the over to 200 degrees Celsius (392 Fahrenheit).
- Wash, peel and chop the carrots then place into a mixing bowl.
- Add the olive oil, honey, thyme, salt and pepper and mix with your hands to coat.
- Arrange the carrots in a baking tray and bake for 20-25 minutes.
