Carrots with Thyme & Honey

Carrots support brain health and our cognitive functions as well as improving our vision, skin, hair, teeth and so much more. This is a simple side dish which you can make in under 30 minutes.

Preparation time: 5 minutes Cooking time: 20-25 minutes.

Ingredients (serves 3-4 people)

  • 8-10 carrots chopped
  • 2-3 tbsp. of olive oil
  • 1 tsp. honey
  • 4-5 sprigs of thyme
  • Salt and pepper to taste

Preparation

  1. Preheat the over to 200 degrees Celsius (392 Fahrenheit).
  2. Wash, peel and chop the carrots then place into a mixing bowl.
  3. Add the olive oil, honey, thyme, salt and pepper and mix with your hands to coat.
  4. Arrange the carrots in a baking tray and bake for 20-25 minutes.
