Lemon & Mustard Potatoes

You’ll see a lot of lemon in my recipes because I absolutely adore it. These perfectly roasted potatoes can be served as a side dish alongside meat or fish dishes. Yummy.

Preparation time: 5 minutes. Cooking time: 45-50 minutes.

Ingredients (serves 4 people)

  • 6-8 white potatoes (peeled)
  • 1/4 cup of olive oil
  • Juice of 1-2 lemons
  • 3 tbsp. dijon mustard
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 200 degrees Celsius.
  2. In the meantime, peel the potatoes and cut them roughly into 2 cm thick pieces.
  3. Boil the potatoes for 3-4 minutes (they should still be hard inside when you take them off the boil). Drain the water and set aside for now.
  4. In a separate bowl, mix the olive oil with the lemon juice, mustard, salt and pepper.
  5. Place the potatoes into a baking tray and pour the olive oil mixture over them to ensure all the potatoes are coated.
  6. Once the oven is pre-heated, bake for 40-45 minutes until crispy on the outside and soft on the inside (turning the potatoes twice during baking).
